- 1 bagel, split in half
- 2-3 tbsp mascarpone cheese
- Handful of rocket leaves
- 2 thin slices fresh pineapple (or canned in natural juice, drained)
- Freshly ground black pepper
- 4 slices Parma Ham
- Maple syrup, for drizzling

Directions
Lightly toast the cut sides of the bagel.
Spread the mascarpone cheese thickly over the base of the bagel, then top with the rocket leaves and pineapple. Season with a little black pepper.
Pile the Parma ham onto the bagel and drizzle a little maple syrup over. Put the bagel top in place, then eat!
Cook’s tips: Parma ham partners some fruits perfectly – instead of pineapple, try sliced fresh peach, mango, papaya or nectarine. Watercress works well instead of rocket too.
