Recipes | Hot focaccia sandwich with Parma Ham and melting mozzarella

Create a satisfying sandwich for brunch or lunch with a few simple, quality ingredients.

Serves 2

  • 2 courgettes, sliced diagonally
  • 3-4 tbsp olive oil
  • 2 generous slices rosemary focaccia bread, split horizontally
  • 1x125g ball mozzarella cheese, drained and sliced
  • 4-6 slices Parma Ham

Directions

Preheat a char-grill pan or the grill.
Brush the courgette slices with olive oil, the char-grill or grill them in batches until lightly browned and tender. Set to one side.
Arrange the courgettes and sliced mozzarella on the warm bread, season with black pepper, then top with slices of parma Ham.

Cook’s tip: use ciabatta bread instead of focaccia, and try char-grilled peppers instead of courgetts.
