Recipes | Pizza with raw vegetables and Prosciutto di Parma

2 pizzas

  • 500g pizza dough, ready to use
  • 200g cherry tomatoes
  • 6 tbsp tomato sauce
  • 2 courgettes
  • 2 artichokes, trimmed and with thorny tips removed
  • 100g Parma Ham
  • salt, basil, oregano
  • extra virgin olive oil

Directions

Divide the dough and flatten it to form two pizzas.  Arrange them on greased tins.  Cover and leave to rise for 20 minutes.

In the meantime, cut the cherry tomatoes in four, drain them slightly, then dress with salt, olive oil, oregano and torn basil.  Grate the courgettes and add them to the cherry tomatoes.

Flavour the tomato sauce with salt and olive oil.

When the pizza bases have risen well, top them with tomato sauce and put in the oven at 200° for 20 minutes. Take the pizzas out of the oven and quickly top them with vegetables, including the artichokes sliced thinly and dressed with olive oil and salt.

Drizzle with olive oil and put back in the oven at 200°C for 10 more minutes.

Take the baked pizzas out of the oven and top them with slices of Prosciutto di Parma.
