Recipes | Parma Ham wrapped pear, stem ginger and rocket rolls with a lemon-vodka dipping sauce

Makes 12

  • 2 ripe pears, each cut into 6 segments
  • 2 balls stem ginger, finely sliced
  • 2 handfuls fresh rocket leaves
  • 12 springs of fresh thyme
  • 1 handful roughly chopped coriander leaves
  • 12 slices Parma Ham

Lemon-vodka dipping sauce

  • 2 tbsp stem ginger syrup
  • Finely grated zest of 2 lemons
  • Juice of 1 lemon
  • 2 tbsp olive oil
  • 1 tbsp vodka
  • Salt and black pepper

Directions

Combine all the ingredients together to make the dipping sauce, season to taste and leave to chill in the refrigerator.
Top each pear segment with slices of stem ginger and a few rocket and a spring of thyme.
Wrap a slice of Parma Ham around each pear segment and serve to guests along with chilled lemon-vodka dipping sauce.
