Recipes | Parma Ham, Melon and Gorgonzola Salad

This healthy, lively salad is sprinkled with toasted seeds and nuts to add crunch and a fantastic flavour

Serves 4

  • 4 generous handfuls mixed salad leaves
  • 100g mixed sprouting seeds
  • ½ small orange-fleshed melon, peeled, deseeded and chopped
  • 150g Gorgonzola cheese
  • 50g mixed seeds (sunflower, sesame, pumpkin and poppy)
  • 50g hazelnuts, roughly chopped
  • 8 slices Parma Ham


  • 2 tbsp hazelnut or walnut oil
  • 4 tbsp olive oil
  • 3 tbsp lemon juice
  • 1 tsp Dijon mustard
  • Salt and freshly ground black pepper


Share the mixed salad leaves and sprouting seeds between 4 serving plates, then arrange an equal amount of melon and Gorgonzola on top
Put the mixed seeds and hazelnuts into a dry frying pan and heat them, stirring until lightly toasted. Cool for a few minutes
Make the dressing by whisking the oils, lemon juice and mustard together. Season with salt and pepper
Sprinkle the toasted seeds and nuts over the salads and add the slices of Parma Ham. Drizzle with the dressing, then serve at once
