Corsairs

Regarding the formidable Genoese corsairs of the period between the 18th and 19th centuries, curious documents on the stages of preparation for the “war crusade”, about six months at sea in search of possible “prey”, are kept in the State Archives of Genoa. Of the provisions stored on board, ham that, due to its characteristics, lends itself to extended use, is very often mentioned. The Po Valley-Venetian origin of the ham, like many other goods mentioned in the log books, was guaranteed by the ancient tradition of culinary purchases and importations from that area to Liguria.
